Tsipouro

With or without anise

The production of tsipouro is lost in the depths of time, but it is said to have begun in the 14th century by monks of Mount Athos (Holy Mountain). Raw material for the production of spirits are the marc, namely rags (residues) of grapes remaining after compression of grape pulp, for winemaking. Tsipouro is subject to two distillations, and during the second one flavorants are added such as anise, fennel etc. Anise gives this white color when water or ice is added. It is served in small glasses and accompanied with mezedes or drunk plain.

Ouzo

Protected Geographical Indication-PGI

Ouzo comes from the distillation of alcohol of agricultural origin, such as cereals, containing various aromatic herbs (coriander, mint, nutmeg, etc.) with anise dominating. It is supposed to have been produced in a similar form since antiquity and was already known during the Byzantine Empire. There is no specific recipe for ouzo as each one has its own unique flavour and recipe.

Tahini

Tasty white or black tahini made from peeled or non-peeled sesame. Rich in protein and fat (monounsaturated and polyunsaturated), fiber, vitamins, calcium and trace elements (iron, magnesium) is a delicious ingredient in many recipes. Consumed as ointment, in tahini-soup, salads and many dishes and sweets.
The seperation of sesame oil on the surface is a natural phenomenon and a simple shuffle brings the tahini to its original form.
